Thanksgiving Pie Anyone!
APPLE CRUMB CAKE
 The other day my neighbor came by with bright green crab apples from his backyard tree. I had just enough to make at least three pies. My husband so eagerly craved the taste of a homemade pie, and so gladly volunteered his assistance in the kitchen. Remember that little bristro in Jackson Hole? Well, needless to say I came across this wonderfully easy Apple Crumb Pie Recipe, by Ardis Rollefson who resides in Jackson Hole, WY.
I pulled the ingredients together and with my husbands determination made two pies which I frozed for Thanksgiving dinner and had the third one spliced for each member of my family. My husbands eyes glazed before the dessert plate and Mmmm'ed his way to the last bite. Thanks Ardis, this is a keeper....

Pie Anyone?
The other day my kind neighbor dropped off some bright green crab apples. My husband so desperately wanted me to make him a homemade pie that he gladly volunteered his assistance in the kitchen. Remember that little bistro, called the Bunnery in Jackson Hole? Well, I was fortunate enough to have found a recipe for a wonderful Apple Crumb Pie, by Ardis Rollefson who happens to live in Jackson Hole, WY.

Well needless to say I quickly went to work on the pie after finding out that my husband eagerly had chopped up all of the apples instead of slicing them, no turning back now! So together we prepared the homemade pie crust and filling finishing off three full sized apple crumb pies. I went ahead and froze two for this Thanksgiving dessert, and spliced the third pie for each member of my family. My husbands eyes glazed as I served him his dessert plate, Mmmm'ed the whole time he ate it! Thanks Ardis, this ones a keeper.

APPLE CRUMB PIE RECIPE

PASTRY DOUGH:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 1 tablespoon white vinegar
  • 6 tablespoons milk
 First combine all dry ingredients, cut in shortening and mix with hand till its a crumbly texture. Next, add the vinegar and milk. Then form into a ball, cover with plastic wrap and refrigerate for at least 25 minutes before rolling out dough and line pie plate with pastry.

PIE FILLING:
  • 6 cups chopped tart apples
  • 2 tablespoons butter, melted
  • 2 tablespoons sour cream
  • 4 teaspoons lemon juice
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
 In bowl, combine the butter, sour cream, lemon juice, sugar, flour, cinnamon and nutmeg. Place apples in pie pan and pour filling into pan.

CRUNCHY TOPPING :
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup cold butter
Combine all dry ingredients, then cut in butter and mix until course texture. Simply sprinkle heavily onto top of pie filling. Bake at 375 for 45 minutes or bubbly. Cool on a wire rack. * This recipe serves 8.
